Ingredients

For the Chicken
  • 1½ lbs 680g boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
For the Crispy Panko-Parmesan Breading
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Olive oil spray

Method

  1. Season the chicken: pat the chicken pieces dry with paper towels, then toss with the salt, black pepper, garlic powder, onion powder and smoked paprika until evenly seasoned.
  2. Set up a breading station: put the flour in one shallow bowl, the beaten eggs in a second, and mix the panko with the grated Parmesan and Italian seasoning in a third.
  3. Bread every nugget: dredge each piece in flour (shake off excess), dip in beaten egg, then press firmly into the panko-Parmesan mixture, turning to coat all sides.
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes. Lightly spray the basket with olive oil spray and arrange the nuggets in a single layer with space between them; mist the tops lightly with oil spray.
  5. Air fry at 400°F (200°C) for 10–12 minutes, flipping halfway through, until deeply golden and crisp and the internal temperature reaches 165°F (74°C).
  6. Rest the nuggets for 2 minutes so the coating sets, then serve hot with your favorite dipping sauces.

Notes

For freezer-friendly batch cooking, flash-freeze breaded uncooked nuggets on a tray, then bag for up to 3 months; cook straight from frozen, adding 2–3 minutes. Cook to 165°F (74°C) internal temperature. Skip the microwave for reheating — re-crisp in the air fryer at 375°F (190°C) for 3–4 minutes.
