Ingredients
Method
- Step 1: Toast and Grind the Chettinad Masala — Toast the peppercorns, fennel, poppy seeds, cumin, dried red chilies, cardamom, cinnamon, and cloves in a dry skillet over medium heat for 2–3 minutes until fragrant and a shade darker. Add the grated coconut and toast 1 more minute until golden. Cool slightly, then grind to a fine powder.
- Step 2: Marinate the Chicken — Toss the chicken with turmeric, red chili powder, lemon juice, salt, and 2 tablespoons of the freshly ground Chettinad masala. Rest at least 20 minutes (up to 2 hours refrigerated).
- Step 3: Brown the Base — Heat the coconut or sesame oil in a heavy pan over medium-high heat. Add the bay leaves and sliced shallots; cook 7–8 minutes until deep golden. Stir in the curry leaves and ginger garlic paste; cook 1 minute.
- Step 4: Build the Gravy — Add the chopped tomatoes; cook 4–5 minutes until pulpy. Stir in the remaining ground Chettinad masala and the tamarind water. Pour in 1 cup of water, scraping up the browned bits.
- Step 5: Simmer the Chicken — Add the marinated chicken and toss to coat. Bring to a gentle boil, then reduce to low, cover, and simmer 25–30 minutes until cooked through (165°F / 74°C) and tender, with oil separating at the edges of the gravy. Add a splash of water only if too thick.
- Step 6: Finish and Serve — Uncover and simmer 5 more minutes to thicken to a rich, clinging consistency. Top with toasted coconut, crisp fried curry leaves, and cilantro. Serve hot.
Notes
Toast and grind the masala fresh — it's the soul of the dish; bone-in chicken gives the richest gravy; leftovers improve overnight and keep 4 days refrigerated or 3 months frozen.
