  • 3 tablespoons plain yogurt
  • 1 tablespoon ginger garlic paste
  • 1 tablespoon lemon juice
  • 2 tablespoons tikka masala paste store-bought is fine
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • 1 teaspoon salt
For the Stir-Fry
  • 3 tablespoons oil divided (a karahi or wok is ideal)
  • 2 large onions — 1 finely chopped 1 finely chopped, 1 cut into thin juliennes (strips)
  • 1 tablespoon ginger garlic paste
  • 1 green chili sliced (add more for extra heat)
  • 1½ tablespoons tomato paste
  • 2 tablespoons tomato ketchup
  • 1 teaspoon soy sauce
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon garam masala
  • ½ teaspoon white pepper
  • ½ cup water about 120ml
The Crunchy Vegetables (add near the end)
  • 1 red capsicum (bell pepper) cut into ½-inch strips
  • 1 green capsicum bell pepper, cut into ½-inch strips
  • 1 yellow capsicum bell pepper, cut into ½-inch strips
  • Fresh cilantro chopped (for garnish)
  • Lemon wedges for serving

Method

  1. Step 1: Marinate the Chicken — Mix the yogurt, ginger garlic paste, lemon juice, tikka paste, cumin, coriander, turmeric, and salt into a smooth paste. Add the chicken strips and toss until well coated. Cover and marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator.
  2. Step 2: Sear the Chicken — Heat 2 tablespoons of oil in a karahi or large wok over high heat until shimmering. Add the marinated chicken in a single layer (work in two batches if needed) and stir-fry for 5–6 minutes until lightly charred at the edges and nearly cooked through. Remove to a plate.
  3. Step 3: Build the Sauce Base — Lower the heat to medium. Add the remaining oil, then the finely chopped onion; cook 4–5 minutes until soft and lightly golden. Stir in the ginger garlic paste and sliced green chili; cook 1 minute. Add the tomato paste and cook 2 minutes until darkened. Stir in the ketchup, soy sauce, Kashmiri red chili powder, garam masala, white pepper, and water. Simmer 3–4 minutes until slightly thickened and glossy.
  4. Step 4: Combine Chicken and Sauce — Return the seared chicken (with any juices) to the pan. Simmer on medium heat for 4–5 minutes until cooked through (165°F / 74°C) and the sauce coats every strip.
  5. Step 5: Add the Peppers and Julienned Onions — Stir in the julienned onion and all three capsicum strips. Toss and cook on high heat for just 2–3 minutes — the vegetables must stay bright, crisp, and slightly charred at the edges, never soft.
  6. Step 6: Finish and Serve — Take the pan off the heat. Scatter over fresh cilantro and squeeze over a little lemon juice. Serve immediately while the peppers are still crunchy.

Notes

Stir-fry on high heat in batches; add peppers and julienned onions last for crunch; ketchup adds glossy restaurant sweetness; leftovers keep 3 days refrigerated (add fresh peppers when reheating).
