Ingredients

  •

For the Crispy Pakora Marinade
  • 1½ lbs boneless, skinless chicken thighs, cut into 1-inch pieces (breasts work too, but thighs stay juicier) (700g)
  • ¼ cup plain whole-milk yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon Kashmiri red chili powder color without too much heat
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
For the Gram Flour Batter
  • 1 cup besan gram flour, sifted
  • 2 tablespoons rice flour the crispiness secret
  • 1 teaspoon ajwain carom seeds, lightly crushed
  • ½ teaspoon cumin seeds
  • ½ teaspoon baking soda for a light, airy crunch
  • 2 green chilies finely chopped
  • ¼ cup fresh cilantro chopped
  • 2 tablespoons fresh mint leaves chopped
  • 1 teaspoon kasuri methi dried fenugreek leaves, crushed between your palms
  • 1 teaspoon salt plus more to taste
  • ⅔ cup cold water plus more as needed
  • Neutral oil for deep frying canola or sunflower, about 4 cups
  •

Equipment

  • Kadhai or deep heavy pan

Method

  1. In a large bowl, whisk together the yogurt, ginger-garlic paste, lemon juice, salt, Kashmiri chili powder, turmeric, and garam masala. Add the chicken pieces and toss until every piece is well coated. Rest for 15–20 minutes at room temperature, or up to 2 hours in the fridge. This crispy pakora marinade seasons the chicken from within and keeps it juicy during frying.
  2. In another bowl, whisk the besan, rice flour, ajwain, cumin seeds, baking soda, green chilies, cilantro, mint, kasuri methi, and salt. Add the cold water a little at a time, whisking until you have a thick, spoon-coating batter — like pancake batter. This classic gram flour batter recipe should cling heavily to the chicken; if it's thin, the coating slides off in the oil.
  3. Pour 2–3 inches of oil into a deep, heavy pan or kadhai. Heat to 350°F (175°C). Test it: a drop of batter should sizzle and rise to the surface immediately without browning too fast. Maintaining this temperature is the heart of good deep frying — too cool and the pakoras turn oily, too hot and they burn outside while staying raw inside.
  4. Add the marinated chicken pieces to the batter and toss until fully coated. Gently slide a few pieces into the hot oil — don't crowd the pan. Fry for 5–6 minutes, turning once, until deep golden brown and crisp. Lift out with a slotted spoon and drain on a wire rack (not paper towels, which trap steam and soften the crust). Repeat with remaining batches.
  5. While still hot, sprinkle the pakoras with chaat masala and a pinch of extra salt. Serve immediately with green mint chutney and lemon wedges — chicken pakora with mint chutney is the classic pairing, and the fritters start losing their crunch within 15–20 minutes of frying.
  6. For air fryer chicken pakora, arrange the battered pieces in a single layer in the air fryer basket, spray generously with oil, and air fry at 400°F (200°C) for 12–14 minutes, flipping halfway and spraying again, until golden and crisp.

Notes

Keep oil at 350°F/175°C; drain on a wire rack, not paper towels; serve within 15–20 minutes for max crispness; air fryer option: 400°F/200°C for 12–14 minutes with oil spray.
