Ingredients

For the Vinegar Marinade
  • 1½ lbs boneless, skinless chicken thighs, cut into 1½-inch pieces (700g)
  • ¼ cup white wine vinegar or distilled white vinegar
  • 1 tablespoon ginger garlic paste
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
For the Vindaloo Gravy
  • 8–10 dried Kashmiri red chillies soaked in hot water for 20 minutes and drained (use 4–5 for medium heat, or swap 2 for dried bird's eye chillies for extra hot)
  • 1 large onion finely chopped
  • 1 tablespoon oil plus 1 more for searing
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 medium potatoes cut into 1-inch cubes
  • 1 tablespoon tamarind paste dissolved in ¼ cup warm water or 1 tablespoon extra vinegar
  • 1½ cups hot water
  • Salt to taste
For Finishing
  • Fresh cilantro chopped (for garnish)
  • 1 teaspoon sugar optional, to round out the vinegar tang

Method

  1. Step 1: Marinate the Chicken — Whisk the vinegar with the ginger garlic paste, cumin, coriander, turmeric, garam masala, salt, cinnamon, and cloves. Add the chicken and toss until coated. Cover and refrigerate for at least 30 minutes — 2 hours if you have time.
  2. Step 2: Make the Vindaloo Spice Paste — Drain the soaked Kashmiri red chillies (reserve a splash of the soaking water). Blend the chillies with a few tablespoons of water into a smooth, thick paste.
  3. Step 3: Temper the Spices and Brown the Base — Heat 1 tablespoon of oil in a large, heavy pot over medium heat. Add the mustard seeds and cumin seeds; when they pop (about 30 seconds), add the chopped onion. Cook 8–10 minutes until deep golden brown.
  4. Step 4: Add the Chilli Paste and Chicken — Stir the Kashmiri chilli paste into the onions and fry 2–3 minutes until the oil begins to separate. Add the marinated chicken with all its marinade and sear 5–6 minutes, turning, until lightly browned.
  5. Step 5: Simmer with Potatoes — Add the potato cubes, tamarind water, and 1½ cups hot water. Bring to a boil, then reduce to a gentle simmer. Cover and cook 30–35 minutes until the chicken is tender, the potatoes soft, and the gravy thick and glossy. If too thin, simmer uncovered for the last 10 minutes.
  6. Step 6: Finish and Rest — Taste and adjust: salt as needed, the optional sugar if the tang feels sharp, or a splash of vinegar for more punch. Rest off the heat for 10 minutes. Garnish with cilantro and serve hot.

Notes

Adjust heat with chilli count (4–5 medium, 8–10 hot); vinegar marinade needs 30 min minimum; flavors deepen overnight; Instant Pot: 8 min high pressure + 10 min natural release.
