Ingredients

  •
For the Pasta Salad
  • 12 oz 340g tri-color rotini pasta
  • 3 cups shredded rotisserie chicken about half of a standard rotisserie chicken
  • 1 cup diced celery 2–3 stalks
  • ½ cup finely diced red onion
  • 1 cup halved cherry tomatoes
  • ½ cup diced red bell pepper
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley plus extra for garnish
For the Creamy Ranch-Dijon Dressing
  • 1 cup mayonnaise
  • ⅓ cup sour cream or plain Greek yogurt for a lighter version
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon freshly ground black pepper

Equipment

  • Large pot

Method

  1. Step 1 – Cook the Pasta: Bring a large pot of generously salted water to a rolling boil. Cook the tri-color rotini until just al dente — usually 8–9 minutes. Drain and rinse immediately under cold running water until completely cool.
  2. Step 2 – Whisk the Dressing: In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper until completely smooth.
  3. Step 3 – Prep the Chicken and Vegetables: Shred about 3 cups from half a rotisserie chicken. Dice the celery, red onion, and bell pepper; halve the cherry tomatoes.
  4. Step 4 – Combine Everything: Add the cooled rotini, shredded chicken, celery, red onion, cherry tomatoes, bell pepper, cheddar, and parsley to the bowl with the dressing. Fold gently until every piece is coated.
  5. Step 5 – Chill Before Serving: Cover and refrigerate at least 1 hour (2 hours is even better) so flavors meld.
  6. Step 6 – Finish and Serve: Stir, taste and adjust salt and pepper. If dry after chilling, stir in a tablespoon or two of mayonnaise. Serve cold with extra parsley.
