Ingredients

For the Chicken
  • 2 lbs 900g boneless, skinless chicken thighs (breasts work too, but thighs shred more juicily)
  • 1½ teaspoons salt divided
  • 1 teaspoon ground cumin
  • ½ teaspoon black pepper
For the Chipotle-Tomato Sauce
  • 1 tablespoon olive oil or neutral oil
  • 2 medium yellow onions thinly sliced
  • 3 –4 chipotle peppers in adobo sauce chopped (use 3 for medium heat, 4 for extra smoky heat), plus 1 tablespoon of the adobo sauce
  • 1 can 14 oz / 400g fire-roasted diced tomatoes
  • 3 garlic cloves minced
  • 1 teaspoon dried Mexican oregano or regular dried oregano
  • ½ teaspoon ground cumin
  • 1 bay leaf
  • ½ cup low-sodium chicken broth
For Serving
  • Lime wedges
  • Fresh cilantro chopped
  • Warm corn tortillas tostada shells, or rice bowls
  • Diced white onion crema or sour cream, crumbled queso fresco or feta (optional toppings)

Equipment

  • Instant Pot

Method

  1. Pat the chicken thighs dry and season all over with 1 teaspoon of the salt, the cumin, and the black pepper. Set the Instant Pot to Sauté on high and let it heat for 2–3 minutes.
  2. Add the oil to the pot, then the sliced onions with a pinch of salt. Cook for 5–6 minutes, stirring, until softened and lightly golden at the edges. Stir in the chopped chipotle peppers, adobo sauce, garlic, Mexican oregano, cumin, and bay leaf; cook 1 minute until deeply fragrant.
  3. Pour in the fire-roasted tomatoes with their juices and the chicken broth. Scrape the bottom of the pot well to release any browned bits — this prevents the burn warning. Nestle the seasoned chicken thighs into the sauce so they're mostly submerged.
  4. Lock the lid, set the valve to Sealing, and cook on High Pressure for 12 minutes. When it finishes, let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
  5. Remove the chicken to a cutting board and discard the bay leaf. Using two forks (or clean hands once cool enough), shred the chicken into bite-sized pieces. It should fall apart easily — that's how you know it's done.
  6. Set the Instant Pot to Sauté on high and simmer the sauce for 5–7 minutes, stirring occasionally, until it thickens to a rich, spoonable consistency. Return the shredded chicken to the pot and toss until every strand is coated in the smoky sauce. Taste and adjust salt, and add a squeeze of lime.

Notes

Start with 3 chipotle peppers and add more adobo sauce to taste; reduce the sauce before adding the shredded chicken so tostadas stay crisp; freezes well for up to 3 months.
