Ingredients

Soup
  • 2 tablespoons oil or ghee
  • 1 large onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 medium apple Granny Smith or Honeycrisp, peeled and diced
  • 1 tablespoon ginger garlic paste
  • 1½ lbs 700g boneless, skinless chicken thighs (breasts work too — see Tips)
  • 1 cup red lentils rinsed
  • 4 cups chicken broth
  • 1 14-oz / 400ml can coconut milk, divided
Spices
  • 2 tablespoons curry powder mild or hot, your call
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon salt plus more to taste
Finishing
  • Remaining coconut milk from the can or ½ cup heavy cream — see the coconut-vs-cream note below
  • 2 tablespoons fresh lemon juice
  • Fresh cilantro chopped (for garnish)
  • Cooked basmati rice for serving

Equipment

  • Instant Pot

Method

  1. Sauté the Aromatics: Set the Instant Pot to Sauté (normal) and heat the oil or ghee. Add the onion, carrots, celery, and diced apple. Cook for 5–6 minutes, stirring occasionally, until the onion softens and the edges of the vegetables start to turn golden. Stir in the ginger garlic paste and cook 1 more minute until fragrant.
  2. Bloom the Spices: Sprinkle in the curry powder, turmeric, cumin, coriander, black pepper, and salt. Stir constantly for 30–45 seconds until the spices darken slightly and smell intensely aromatic. This quick bloom in hot oil is what gives the soup its deep, rounded curry flavor.
  3. Add Everything and Pressure Cook: Pour in the chicken broth and scrape up any browned bits from the bottom of the pot (this prevents the burn notice). Add the chicken thighs, rinsed red lentils, and about one-third of the coconut milk. Cancel Sauté, lock the lid, set the valve to Sealing, and pressure cook on High for 10 minutes.
  4. Release and Shred: Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure. Remove the chicken thighs to a plate and shred them with two forks — they'll be fall-apart tender.
  5. Blend and Finish: Use an immersion blender to partially blend the soup right in the pot — 4–5 quick pulses, so it's creamy but still has texture. (For a silkier soup, blend longer.) Stir the shredded chicken back in, then stir in the remaining coconut milk and the lemon juice. Taste and adjust salt.
  6. Serve: Ladle the soup over scoops of hot basmati rice in deep bowls, garnish generously with chopped cilantro, and serve immediately.

Notes

Use red lentils only (they melt; brown/green stay firm). Partially blend for natural creaminess — no thickeners. Coconut milk = dairy-free and traditional; heavy cream = richer — add off heat. Leftovers keep 4 days refrigerated or 3 months frozen; thin with broth when reheating.
